In those same areas that we mentioned there’s a small number of olive oil tree from where olives are produced and are well-known as the olives, a variety grown and produced in Kalamata.
When it’s time the olives are collected one by one by hand (so that it is not damaged) and then comes the procedure of the selection. The best quality in size is selected for storage and the smaller ones for the production of tapenade. Those which are damaged are thrown away.
Because of the fact we do not use any peservatives the process and the storage is according to the demand so that the product that reaches the buyer to be recently produced.
